Cooking Thai with Thai Kitchen: Review and Giveaway (Ends 1/23) CLOSED

I love Thai food, and Pad Thai is one of my favorite dishes. I never tried to cook it until I discovered Thai Kitchen. Now I can have all the Thai I can eat - in my own home!

Thai Kitchen sent me several products to try: Coconut Milk, Stir-Fry Rice Noodles, Jasmine Rice, Red Curry Paste, Premium Fish Sauce, and Thai Kitchen Rice Noodle Pad Thai Cart. Thanks to the recipes that came with these products, I discovered I had everything I needed to prepare several delicious Thai meals. My first dish was the Red Curry Shrimp and Vegetables, served over jasmine rice. It was very easy to make. I used frozen cooked shrimp instead of raw because that's what I had in my freezer. I also skipped the red chiles - my kids are not fans of spicy - and the Thai basil - but the end result was still excellent. Here is the recipe:

1 can (14 ounces) Thai Kitchen® Coconut Milk
2 tablespoons Thai Kitchen® Red Curry Paste
1 tablespoon brown sugar
1 pound large shrimp, peeled and deveined
1 cup assorted vegetables, such as snap peas, bamboo shoots and sliced red bell pepper
1/4 cup fresh Thai basil (optional)
2 tablespoons Thai Kitchen® Premium Fish Sauce
Cooked Thai Kitchen® Jasmine Rice (optional)
Fresh red chiles, thinly sliced (optional)
 

Directions:
BRING coconut milk to simmer in large skillet on medium heat. Stir in curry paste and sugar until well blended; bring to boil. Reduce heat to low; simmer 5 minutes. STIR in shrimp and vegetables. Cook 3 to 5 minutes or just until shrimp turn pink and vegetables are tender-crisp. Stir in basil and fish sauce.
SERVE with cooked Jasmine Rice, if desired. Garnish with additional basil and red chile slices, if desired.


Mmmmm... so good! On our next Thai food night, I made the Spicy Chicken Stir-Fry with Rice Noodles and Basil - except I doubled up the recipe, used raw instead of cooked chicken, and skipped the spicy bits because of the kids. Another easy and delicious meal that was a hit at my house. If you have dietary restrictions, check out the nutritional values of each recipe before preparing it - they are readily available on the Thai Kitchen website.

Last but not least, my husband took the Thai Kitchen Rice Noodle Pad Thai Cart to work for lunch one day, and he gave it high marks.

I found Thai Kitchen products at my neighborhood Publix and Kroger but they are available at many stores nationwide as well as online.
