Thai Chicken Slow Cooker #Recipe

I adapted a slow cooker recipe for Thai Pork Stew I found at Busy Working Mama. We love pork but I had some chicken in the freezer, so Thai Chicken it was. This easy meal is full of flavor, and you can add more veggies - carrots, snap peas, whatever strikes your fancy.

Place the following items in the slow cooker on low for 8 hours or on high for 4 1/2.

1 1/2 - 2 pounds boneless skinless chicken breast, cut into 1-inch cubes
2 red bell peppers cut into strips
1 cup sliced baby carrots
1 cup shredded cabbage
12 oz Teriyaki sauce
2 tablespoons rice or white wine vinegar
1-2 teaspoons crushed red pepper (I skipped this and used 1 teaspoon Seven Spice seasoning)
2 garlic cloves, minced

Add 1/2 cup peanut butter and stir well before serving. Top with 1/2 cup chopped green onions and 2-3 tablespoons chopped roasted peanuts. Serve over steamed rice or noodles. Enjoy!

    This looks really good, but I have a family who doesn't like teriyaki sauce (and allergic to soy). Any suggestions for a substitute? Thanks.

    Good job! I love this recipe, and next time I make it I will definitely add more veggies. The snap peas would be great in there!
