Spinach and Nectarine Salad with Pecans and Warm Bacon Vinaigrette
Tired of the same old tossed green salad?
Wake up your taste buds with this fun flavor combination.

Serves 4 –6

6     slices bacon
2     tablespoons shallots, chopped
2     tablespoons white-wine vinegar
½    teaspoon Dijon mustard
       Salt and black pepper
2     ripe nectarines
6     ounces baby spinach
½    cup chopped toasted pecans

TIP: Make this salad in summertime, when nectarines are ripest.

1.    In a large heavy skillet, cook bacon until crisp. Transfer to a paper towel–lined plate; crumble. Drain off 3 tablespoons of the drippings into a small bowl. Add shallots, vinegar, mustard, salt and pepper; whisk until blended. (Discard remaining drippings.)

2.    Over a large serving bowl, cut nectarines into 1-inch chunks. Spoon out about 1 tablespoon of juice released from slicing; whisk into bacon dressing. In the same large bowl, toss nectarines (and any remaining juice) with spinach and pecans. Pour dressing over salad. Add bacon; toss to combine.

    I have not read any of her books, but this one sounds great. I think my mom would love it. As for summer recipes, I don't really have any favorites. I like these cookies with cream cheese frosting and fruit on top. very refreshing.

    I've read Three Little Words and loved it! She has a gift at writing settings with characters you connect with. Would love to check out this cookbook! I have seen it around and it makes my mouth water every time. My favorite summertime recipe is turkey, bacon, tomato and avocado wraps.

    We grill and eat a lot of salads in the summer. Few dishes to wash and doesn't heat up the house. One of my faves is a grilled pork tenderloin with a Greek salad. Simple and delicious.

    I always like it when a favorite series/author likes to share recipes. We just made a shrimp style saute with tomatoes, zuchinni, and peppers from the garden--so yummy and fresh.

    I have read probably most of Susan's books and they are great and I look forward to this cookbook.

    I love to make a tossed salad with assorted fruit, pecans and a light virin olive oil and there are several lemony desserts and key lime pie I love to make for the summer.

    Romance and food are two of my favorite genres. It's awesome that Susan did year-round seasonal recipes. Although I'll probably make vegan and non-alcoholic substitutions for the bacon, Dijon mustard and wine vinegar, the salad recipe sounds wonderful!

    I make a mean ckn parm - get the cutlets really thin with a side of spaghetti, salad and garlic bread. And can all be made ahead of time.
